Ingredients
- 250 g penne or other pasta
- 2 cloves garlic)
- 1 chilli pepper (s), red
- 300 g sausae meat, coarse
- 250 g mushrooms, brown
- 100 g cherry tomato (s)
- 150 ml white wine
- 200 ml cream
- 1 teaspoon, heaped fennel seeds
- 0.25 ¼ bunch parsley, smooth
- salt and pepper
- olive oil

- Press the sausage mixture out of the skin and mix with the ground fennel seeds.
- Of course, an Italian fennel salsiccia is also possible, but it is not available everywhere.
- Put on a saucepan with water for the pasta.
- Finely chop the garlic and a large red chilli pepper with seeds. Clean the mushrooms, cut them into slices and fry them in oil in a deep pan. When the mushrooms are a deep golden brown color, remove them and set aside.
- Heat a large sip of olive oil in the same pan. Add the garlic, chilli and sausage mixture and fry over medium heat. Use a spatula to cut the sausage up a bit so that it doesn`t get too big. When the sausage has turned color, deglaze with white wine and let it boil down briefly.
- Either cut the cherry tomatoes in half or simply squeeze them out over the pan with your hands. Let simmer for about 5 minutes until the tomatoes have dissolved slightly. Add the cream and bring to the boil again. At this moment, a scoop can also add pasta water to the sauce. Lower the temperature a little, add the mushrooms and let them steep in the sauce. Season with salt and pepper and stir in the freshly chopped parsley.
- Immediately place on a plate over the pasta, cooked al dente according to the instructions on the packet, and serve drizzled over with grated Parmesan and a little olive oil.
- A glass of dry white wine goes best with this.
