- Peel the broccoli stalks, cut away any woody spots and cut the rest into small pieces.
- Also cut half the onion into pieces. Roughly chop the carrot greens.
- Cook everything together with a little water. Then puree together with the water.
- Prepare a roux from the butter and flour and pour in some cream. Then mix in the green puree and season with salt, pepper and nutmeg.
