Peel the tomatoes, cut off the stems. Quarter and core the tomatoes, cut into cubes. Finely dice the garlic, core and finely dice the chili peppers, finely chop the kaffir lime leaves.
Heat the sesame oil in a wok and fry the garlic until golden brown. Fry the chilli peppers for 30 seconds, add the pork and fry well.
Gradually add the fish or hoisin sauce, soy sauce, sugar and kaffir lime leaves, stirring again and again. Add the diced tomatoes and cook until they disintegrate.
In the meantime, pour hot water over the noodles, cover and leave for 5 minutes, then drain and place in the wok. Stir and simmer for another 5 minutes. Garnish with coriander leaves.
