Process the dough ingredients into a smooth, supple dough. Chill for an hour.
For the filling, heat a tablespoon of oil and briefly sauté the onion, garlic and tomato paste in it. Add the minced meat and fry. Season with 1 teaspoon salt and 1/2 teaspoon pepper, finally mix in the parsley.
Roll out the dough thinly, cut out approx. 10 cm circles with a glass. Place 1 tablespoon of the filling on top, cover with a slice of egg and / or an olive and fold up. Press the dumplings together with a fork until the typical grooves appear.
Fry in hot oil. The ingredients are enough for about 20 pieces.
Variation: the minced meat can be replaced with a cheese mixture, crab mixture, chicken meat or leftovers.
