Ingredients

For the dough:

  • 500g flour
  • 1 egg yolk
  • 125 g clarified butter
  • 1 teaspoon salt
  • 200 ml water

For the filling:

  • 1 onion (s), finely chopped
  • 1 garlic clove (s), pressed
  • 3 tablespoon tomato paste
  • 250 g minced meat
  • 3 tablespoon parsley, chopped
  • 3 hard-boiled egg (s)
  • Olives, pitted
  • Oil for deep-frying

Instructions

  1. Process the dough ingredients into a smooth, supple dough. Chill for an hour.
  2. For the filling, heat a tablespoon of oil and briefly sauté the onion, garlic and tomato paste in it. Add the minced meat and fry. Season with 1 teaspoon salt and 1/2 teaspoon pepper, finally mix in the parsley.
  3. Roll out the dough thinly, cut out approx. 10 cm circles with a glass. Place 1 tablespoon of the filling on top, cover with a slice of egg and / or an olive and fold up. Press the dumplings together with a fork until the typical grooves appear.
  4. Fry in hot oil. The ingredients are enough for about 20 pieces.
  5. Variation: the minced meat can be replaced with a cheese mixture, crab mixture, chicken meat or leftovers.
