Puree the peaches (cut one half into 6 wedges and leave for garnish) to a fine pulp. Mix the mascarpone, quark, sugar and peach juice and fold in the whipped cream.
Layer in dessert glasses as follows: Garnish the mascarpone cream, fruit, breadcrumbs, etc. with a peach wedge and a lemon balm leaf.
