Dice the pears and drizzle with lemon juice to prevent them from browning. Dice the Gouda and ham as well. Put everything together in a bowl. Now mix the dressing from the ingredients for it - I always use a shaker - and pour over it. Cut the chives into small pieces and mix in.
The dressing is very thick, but that`s how it should be. If you like, you can make it a little more liquid with a dash of milk or water.
