For the dressing:

Instructions

  1. Mix all ingredients well for the dressing.
  2. Slice the fennel into very thin slices, ideally directly on the four plates. Drizzle with some dressing.
  3. Halve the pears, remove the core and slice or slice into very thin wedges, if possible also directly on the fennel and drizzle with the dressing immediately.
  4. Finally, grate the sliced cheese directly over it and sprinkle with coarse pepper.
