Wash the pears, rub dry, cut in half and remove the core. Then slice the pears into thin slices. Pluck the basil leaves from the stems. Finely crumble the Roquefort.
Now stir together the lime juice, maple syrup, salt and pepper. Then beat the olive oil under it.
Arrange the pear slices with Roquefort and basil on a platter. Drizzle with the maple syrup dressing.
