Instructions
- Knead the flour, butter, egg and a pinch of salt with 5-6 tablespoons of cold water to form a smooth dough. Let rest in foil for 30 minutes.
- Peel and dice the onion. Cut the smoked bacon into thin strips. Halve the pears, peel them, remove the core and cut into slices.
- Leave out the bacon, add the onion and sauté until translucent. Add the butter and pear wedges. Braise the pears. Season with pepper and nutmeg.
- Mix eggs with cream and grated cheese, season with salt and pepper.
- Grease a quiche tin with oil.
- Roll out the dough on a floured work surface and line the mold with it. Spread the pear and bacon mixture on top and pour the egg cream over it.
- Bake in the preheated oven at 200 degrees for approx. 20-25 minutes.
