Instructions

  1. Drain the pears. Spread on bowls. Crush the chocolate. Melt with 2 tablespoons of pear juice in a hot water bath. Stir in egg yolks, powdered sugar (to taste) and butter. Whip the cream until stiff, fold in. Pour the chocolate foam over the pears and chill.
