Instructions

  1. Peel and halve the pears. Then remove the core casing. Melt the butter and add the sugar. Stir with a little water and the Vin Santo and fry the pears on a low heat. Finally, add a sip of water as required and let it steep with the lid closed.
  2. In the meantime, whip the cream, add the sugar and the scraped vanilla pod. Carefully stir in the mascarpone.
  3. Fill the mascarpone cream into bowls and put one half of the pear on top. Pour a little roast juice over them and sprinkle with the chopped pistachios. Serve cold.
