Portion the spare ribs the size of a palm, clean, remove any excess fat.
Gently heat the tomato ketchup, soy sauce and honey in a small saucepan until the honey has dissolved. Season well with the sherry and the remaining spices.
Place the ribs upside down on the grill and grill for about 5 minutes, then turn and brush with a little grill sauce. Turn again after 5 minutes and brush the underside. Continue like this until the ribs are nice and crispy and covered in a deep red glaze.
