Dice the onion and peppers (red and green), finely chop the garlic, remove the salsiccia from the intestines and dice.
Heat olive oil and add salsiccia over medium heat, fry for 3-5 minutes. Then add the onion and sweat it, then add the paprika, let it stew for about 5 minutes. Now add garlic and pepper, let simmer for about 2 minutes. Now stir in the tomato paste and add the red wine, let it boil down for about 5 minutes (very important !!!!). Finally add the pizza tomatoes and season again with salt and pepper.
Let simmer for at least 30 minutes at a low temperature.
Cook the penne rigate al dente, sprinkle the sauce over it and sprinkle with good parmesan cheese.
