Instructions

  1. Sear the steaks and continue cooking to taste, pink or well done. Remove the steaks and keep them warm in the oven at 70 °.
  2. In the meantime, remove the roasting mixture with the cognac, add the cream and the green peppercorns, simmer briefly and season with salt and pepper.
  3. Serve the steaks with the sauce, each with half an apricot filled with cranberry compote, tastes great.
  4. French fries or croquettes and salad go well with this.
