Wash, core and cut the peppers into quarters. Wash the tomatoes, quarter them and remove the stalks. Wash and chop the parsley, remove the stalks. Finely chop the garlic clove.
Fry the pepper pieces in the pan in the olive oil on both sides and then place in a bowl. Wait a little for them to cool down, then add the tomatoes. Add the garlic and parsley, mix, season with salt and pepper and serve.
