Instructions

  1. Put the carrots in a bowl. Cut away the peel and white skin from the oranges. Remove the fillets and chop. Add to the carrots with raisins and halved almonds.
  2. Dressing: Mix the oil, lime juice and spices with the sugar in a screw-top jar and pour over the salad. Mix the salad and refrigerate for 1 hour. Garnish with lime wedges.
