- Wash the cured beef tongue well and cook it in plenty of water with the addition of the spices. This usually takes 3 hours.
- Then skin the tongue, cut off the fat generously, cut into finger-thick slices and keep warm.
- Melt the butter in a small saucepan and lightly brown. Place the tongue on a plate, pour the butter over it and serve.
- We especially like fresh asparagus and boiled potatoes. The tongue is also very suitable as cold cuts.
