Instructions

  1. Boil the tomatoes in a mixture of 1/4 vinegar and 3/4 water for 1-2 minutes. Dry well with kitchen paper. Put a layer of tomatoes in a bowl, sprinkle with chopped garlic, basil and parsley, hot paprika, pour oil and a few drops of vinegar on top. Repeat in layers and cover with the oil in which the anchovy fillets have been dissolved. Goes well with grilled food, as a starter with Tuscan bread or just with wine.
