Pigodi – Korean Style Pies Instructions

  1. First of all, knead the yeast dough. Combine flour with yeast, add salt, sugar and butter. Pour in water, stirring constantly. Knead not tight, elastic dough.

  2. Let the dough rise.
  3. Cut the meat (I have lean pork, you can also use beef) into small cubes. If your meat is frozen, it is best to slice it until it is completely thawed!
  4. Dice the onion.
  5. Shred cabbage not in long pieces.
  6. Chop the parsley, and squeeze the garlic or three on a grater.
  7. Fry the meat in a small amount of vegetable oil.
  8. Add onion and fry too.
  9. Add cabbage, salt and simmer until the cabbage is soft. If the cabbage is not juicy, you can add some water.
  10. Add parsley and garlic, mix. The filling is ready, let it cool slightly.
  11. Pinch off small balls from the dough and roll out the cakes.
  12. We spread the filling on each “round”.

  13. We collect the edges of the cake in the center and pinch. Can be pinched like an oblong pie. As you like best.
  14. Lubricate the mantle with vegetable oil and spread the pigody. I got 15 pieces.
  15. Steam for 40 minutes. I wrap the lid in a towel so that the moisture is absorbed and water does not drip onto the pies.
  16. Our pigody are ready.
  17. Cooking hot sauce. Put chopped garlic and a little hot pepper paste in a bowl.
  18. Add soy sauce and chopped parsley. We mix.

  19. Can be served with a tomato salad seasoned with olive oil and chopped garlic.
  20. Since my beloved doesn’t like soy sauce, I made a Greek yogurt sauce (sour cream is perfect) with garlic and black pepper for him. (Sorry for the photo … The potato salad didn’t turn out very well – I digested it.)

Bon Appetit!
