Heat a pan and add a little oil. When it`s hot, add the sliced onions and chopped ingredients. Fry until light brown and add the curry leaves, stir well.
Then add the pineapple. If canned pineapples are used, drain them well, collect the juice and set aside. Season with red chilli powder, a little curry powder and salt. Let it cook through well. If you want, you can add some of the pineapple juice that has been collected.
When the curry has finished cooking, add a little coconut milk. Remove from heat and add a little sugar to taste.
