Beat the eggs with the sugar and salt until frothy. Mix the flour with the baking powder and sieve over the egg foam. Add the pineapple juice and work everything into a creamy dough. Add the mineral water and whip the dough again. Let the dough rise in the refrigerator for about 1 hour.
Heat a pan with a little fat. Pour some batter into the pan and spread 2 tablespoons of pineapple pieces on top. Cover the fruit with batter and bake the pancakes until golden brown on each side. Bake another 3 pancakes.
