Peel the pineapple, cut into slices, cut out the hard core and place in a lightly greased flat baking dish. Spread the ham on top and cover with thin slices of goat cheese. Drizzle with olive oil and sprinkle with thyme and pepper.
Baked everything at 180 degrees for 20-25 minutes.
Serve with fresh lamb`s lettuce and a few sprinkles of balsamic vinegar.
