Preheat the oven to 200 degrees. Melt the butter and brown it lightly. Rub the orange peel thinly, squeeze out the juice.
Mix the flour with sugar, cinnamon and orange peel. Pour in the liquid butter and orange juice and mix everything with a fork to form sprinkles.
Prepare the pineapple and cut into rings. Place in a shallow gratin dish in flakes. Brush with the sour cream. Spread the sprinkles on top. Place the pineapple in the middle of the hot oven and bake for about 30 minutes until the crumble is lightly browned.
