Instructions

  1. First season the eggs with salt and pepper, crack open and place them next to the hob.
  2. Chop the mushrooms. Halve the small ones, cut the middle ones into 5 mm slices, place them next to the hob.
  3. Chop the herbs (chives, parsley or chervil, whatever you have in the house) and place them next to the hob.
  4. Heat the small pan to medium temperature. Add half the butter and fry the mushrooms. Remove the mushrooms and sprinkle with a little pepper.
  5. Put the rest of the butter in the pan, add the egg mixture, wait. Don`t stir! When the mixture is still a little liquid on top, distribute the mushrooms nicely like on a pizza, sprinkle herbs over them.
  6. Place a flat lid on the pan, switch off the stove, finish cooking the omelette for approx. 1-2 minutes. Not too long, it shouldn`t dry out.
  7. Please do not try to make the omelette with margarine and canned mushrooms!
