Chop up the bread chips in the lightning chopper and knead with the herb butter and the grated lemon peel. Drizzle the pollack fillet with lemon juice and pepper. Salting is not necessary because the bread chips are already very salty.
Now place the fish fillet in a coated or greased baking dish and top with the bread and herb butter mixture. Cook in a preheated oven at 180 degrees for 15-20 minutes.
