Instructions

  1. Preheat the oven to 90 degrees top and bottom heat. Prepare oven-safe dishes with a wire rack on top.
  2. Season the fillet with salt and pepper, heat some frying fat in a frying pan, fry the fillet all around for 5 minutes and cook in the oven at 90 degrees for an hour and 20 minutes.
  3. Just before the fillet is ready, heat the butter and olive oil in a sauce pan, add the Gorgonzola and melt the Gorgonzola while stirring with a whisk. Add the white wine, let the sauce simmer briefly, add the cream, add the sage leaves and simmer the sauce briefly while stirring.
  4. Prepare three preheated plates. Take the fillet out of the oven and cut into thin slices. Form a saucepan with the sauce on the plates and distribute the fillet slices on top.
  5. Wide noodles go very well with this.
