Wash the potatoes and brush them well. Remove the dark green from the spring onions and cut in half lengthways.
Heat the oil in a pan. Fry the potatoes unpeeled on all sides for approx. 5 - 6 minutes. Peel the garlic cloves, add them to the pan with the halved spring onions and fry for about 5 minutes.
Season with sea salt and pepper. Add the sprigs of thyme and stir again. Pour approx. 50 ml of water. Put the lid on and let it simmer over a medium heat for 10-15 minutes.
