Cut the potatoes into cubes and cook. When they are still fairly firm, fry them in the pan with the olive oil. Cut the sausages into slices and fry them too.
Chop the onion and chop the tomatoes. Fry both briefly. Sweat some tomato paste with it.
Mix the parmesan, the herbs of Provence and the eggs and add to the sear.
When the eggs start to set, season with salt, pepper and the paprika powder.
