Instructions

  1. Boil the potatoes and let them cool.
  2. Knead the butter, eggs, flour and 1 teaspoon salt with the dough hook of the hand mixer, cover and chill.
  3. Peel the potatoes and cut them into slices.
  4. Roll out the dough 1/2 cm thinly into a rectangle of approx. 45X35cm. Place on a baking sheet dusted with flour and lightly press the edges.
  5. Prick evenly with a fork. Cover with the potato slices like a roof tile. Whisk the cream, milk and egg yolk, season with salt, pepper and garlic and pour over the potatoes. Sprinkle with cheese.
  6. Bake the potato cake at 200 ° on the lowest rack for 30-35 minutes.
  7. Mix the creme fraiche with the chives, season with salt and pepper and distribute evenly on the cake. Cover with the smoked salmon slices and serve immediately.
  8. The whole thing tastes lukewarm or cold. For this I cut the cake into small squares and arranged it on a plate.
