Peel the onions, potatoes and carrots and cut into small cubes.
Fry the onions in a saucepan until golden brown. Then add the carrots and sauté gently. Now add the potatoes with a little water (about a quarter of the pot). If there is too much water, the pulp will end up being too thin. Add the cube of beef broth and dissolve. Cover and cook on a low flame until it`s cooked through. Takes about 10-15 minutes, depending on the amount.
Season to taste with parsley and chop with a hand blender.
Meatballs with dark sauce or eggs go well with this.
