Peel the potatoes, cut into slices or cubes, finely chop the onion and garlic. Heat the olive oil in a pan and fry the potatoes in it for about 5 - 8 minutes. Add the minced meat, onions and garlic as well as the spices, thyme and rosemary and fry for another 5 minutes.
Chop the sun-dried tomatoes, halve the olives if necessary, add to the pan and heat briefly. Finally, sprinkle everything with the chopped parsley.
