Put the mashed potatoes, low-fat quark, flour, eggs, salt and possibly pepper in a bowl and stir with a wooden spoon. Finally, place on a floured surface and knead the whole thing into a smooth, firm dough. Possibly add a little more flour (depending on the consistency of the puree). Then roll out approx. 1.5 - 2 cm thick.
Cut out round cookies with a glass. Fry them in hot fat on both sides until they are a nice crispy color.
Serve with applesauce or apple compote. We also like it as a main course, if you don`t always want meat or hearty dishes.
