Boil the potatoes until soft, peel and mash them. Add the eggs, flour and cubes of bacon and stir to form a batter. If you want, you can leave out the bacon cubes. Season to taste with salt and pepper.
Pour the batter into muffin molds and sprinkle the grated Emmentaler on top. Bake the muffins in the preheated oven at 180 degrees for 40 minutes.
