Peel the potatoes and cut or slice into fine julienne. (Works very well with the ProV stainless steel plane)
Also cut the onions very finely. Cut the rocket into fine strips. Mix everything well with the egg and potato starch and season with salt, pepper and nutmeg.
Heat the oil in a pan. Put the rösti mixture in the pan with a tablespoon and press down a little. Bake on both sides over medium heat until crispy until golden brown. Use medium heat so that the raw potatoes cook through well inside as well, 6-8 minutes on each side.
Makes about 8 small rösti, as a side dish for 2-3 people or as a single meal for one person as a main course.
