- 5 potato (s), waxy
- 2 onions)
- 1 bunch rocket
- 1 egg (s)
- 1 teaspoon potato starch
- nutmeg
- salt and pepper
- Oil, neutral

- Peel the potatoes and cut or slice into fine julienne. (Works very well with the ProV stainless steel plane)
- Also cut the onions very finely. Cut the rocket into fine strips. Mix everything well with the egg and potato starch and season with salt, pepper and nutmeg.
- Heat the oil in a pan. Put the rösti mixture in the pan with a tablespoon and press down a little. Bake on both sides over medium heat until crispy until golden brown. Use medium heat so that the raw potatoes cook through well inside as well, 6-8 minutes on each side.
- Makes about 8 small rösti, as a side dish for 2-3 people or as a single meal for one person as a main course.
- Goes very well with lamb or pork tenderloin.
