Instructions

  1. Put the potatoes, carrots and zucchini in a salad bowl and mix.
  2. Make a vinaigrette from vinegar, mustard, garlic and oil and season with salt, pepper and parsley. Pour the vinaigrette over the salad and mix everything together.
  3. Let the salad steep for at least 2 hours before serving.
