- Peel the potatoes and slice them thinly. Fry in hot olive oil in a non-stick pan for 5 - 10 minutes until golden. Turn in between.
- Finely dice the onion. Dice the salami. Put both in the pan and fry them.
- Mix the eggs, milk and herb pieces with a whisk. Pour into the pan. Cover and let set over low heat (until the egg mixture is firm).
- Cut the tortilla into bite-sized pieces. Salt and pepper to taste.
