Recipe for baked potatoes stuffed with a mixture of mashed potatoes, fried bacon, sour cream, cheese and green onions. Delicious potato mass, crispy shell and tender melted cheese – this combination will surely please the supporters of potato dishes with a certain “zest”.
Prepare all the ingredients you need. Wash the potatoes very thoroughly with a brush, as we will bake them in their skins. The butter should be at room temperature. Preheat oven to 200 degrees.
Put the washed potatoes in an ovenproof dish, brush on all sides with olive oil, salt and pepper.
Bake potatoes in an oven preheated to 200 degrees for 35-40 minutes. Cool the finished potatoes slightly.
Cut the bacon into small pieces and place in a dry preheated skillet.
Fry the bacon over high heat for 2-3 minutes, until crispy and melted. Remove from heat and cool slightly fried bacon.
Cut the cooled potatoes into halves, remove most of the pulp with a spoon, taking care not to damage the skin.
Put the flesh of the potatoes in a bowl.
Wash and dry the green onions. For the filling, finely chop the green onions, grate the cheese on a fine grater
Mash the potatoes. Add to it the fried bacon along with the fat, green onions, cheese (save 3 tablespoons for the cheese “cap”), sour cream, soft butter, salt and black pepper. Stir.
Put the potato halves back into the ovenproof dish and fill with the filling.
Put 1 teaspoon of grated cheese on top of each half of the stuffed potatoes. Place in a hot oven.
Bake the potatoes at 200 degrees for 10-15 minutes, until the cheese melts.
Potatoes stuffed with cheese, sour cream and bacon are ready the dish hot, then the cheese “cap” appetizingly reaches for the fork.
Hearty potatoes go well with cheese and bacon. You don’t have to serve meat with the dish, but pickles will be very useful.
