Thaw the spinach, finely chop the onions and garlic. Fry half of the onions and garlic, add the spinach, season with salt and pepper and thicken with a sauce thickener.
Add the remaining onions, garlic, salt, pepper, paprika, 1 egg and breadcrumbs to the minced meat, mix everything together and shape into a roll that is slightly shorter than the puff pastry.
Roll out the puff pastry on a baking sheet lined with baking paper, spread with spinach and place the chopping roll in the center. Roll together, brush with egg yolk and bake for about 40 minutes at 200 degrees.
