Roll out the puff pastry on the baking sheet and brush with the crème fraîche. Pluck the thyme from the stems and spread on the crème fraîche. Season with salt and pepper. Spread the cherry tomatoes on top as well. Tear the goat cheese over the pizza.
Bake the pizza for approx. 15 minutes. Drizzle with honey and bake the pizza for another 8-10 minutes.
