Chop the pumpkin, banana and ginger, rub the peel of the orange and chop the pulp as well. Place in a mixing bowl with the low-fat quark and avocado.
Slit open the side of the vanilla pod and also put the scraped out pulp into the container. If you have a strong mixer or hand blender, you can also cut the pod yourself into small pieces and add it to the mixture.
Mix everything to a homogeneous mass, diluting with yoghurt or milk if necessary.
Pour the mixture into a bowl and decorate with fruit, nuts, coconut chips or cocoa nibs to taste.
