Simmer the amaranth with a little sugar for 10 minutes and let it soak for 10 minutes. Let the swollen amaranth cool down.
Beat the quark with the syrup until smooth. Possibly sweeten the amaranth a little.
Wash, halve, core and dice the apricots. Simmer the apricot cubes and the juice with a little sugar until the liquid is reduced. The cooking time is approx. 3 - 5 minutes.
First pour the quark into glasses, then pour the compote and finally the amaranth on top.
