Ingredients
- 25 g amaranth
- 50 g water
- 200 g quark
- some rice syrup or coconut syrup
- 8 apricot (s) (mini apricots)
- 4 tablespoon orange juice
- 1 teaspoon coconut blossom sugar to reduce the apricots
- Coconut blossom sugar to sweeten the amaranth

- Simmer the amaranth with a little sugar for 10 minutes and let it soak for 10 minutes. Let the swollen amaranth cool down.
- Beat the quark with the syrup until smooth. Possibly sweeten the amaranth a little.
- Wash, halve, core and dice the apricots. Simmer the apricot cubes and the juice with a little sugar until the liquid is reduced. The cooking time is approx. 3 - 5 minutes.
- First pour the quark into glasses, then pour the compote and finally the amaranth on top.
