- Soak the gelatine in cold water. Rub the lemon peel.
- Mix the quark, powdered sugar, lemon zest and juice. Whip the cream almost until stiff.
- Warm up the cognac or milk and dissolve the gelatine in it. Stir into the curd mixture with the whisk. Carefully fold in the cream.
- Fill into molds (cups), refrigerate for 2 hours.
- This quark dessert can be combined with any kind of fresh fruit, compote or red fruit jelly.
