Cut the chilli pepper lengthways, remove the core, remove the membrane and cut finely
Sprinkle half of the tortilla with cheese, top with chili, spring onions, cooked chicken, tomatoes and basil. Fold up and heat in a medium-hot pan for 3-4 minutes - turn once.
Remove from the pan and keep warm in the oven.
Slice open once and serve with guacamole and salsa fresca.
