Mix butter with whole cane sugar or honey until frothy. Gradually add the lemon zest, salt and vanilla and stir. Mix flour with baking powder and stir in tablespoon at a time. Pour the dough into a greased springform pan and bake in the preheated oven at 180 degrees for about 45 minutes.
The cake is very suitable for sunken fruit cakes.

You can also bake it very well in muffin tins. Baking time much shorter, around 20 minutes.
