Instructions

  1. Cook the pasta until al dente according to the instructions on the packet. Then pour off through a sieve.
  2. Wash the cherry tomatoes. Peel the onion. Cut both into small pieces.
  3. Heat the olive oil in a saucepan and sweat the onion cubes until translucent. Then add the tomatoes and let it boil down a little. Season to taste with tomato paste, salt, pepper, sugar and Italian herbs. Let the sauce simmer for a few minutes until it has the desired consistency. If it becomes too thick, add some of the pasta water.
  4. While the sauce is boiling down, cut the mozzarella into small cubes. Wash the basil and cut into small pieces.
  5. To serve, mix the cooked pasta with the hot tomato sauce, mozzarella and basil. After a few seconds, the mozzarella will melt.
