Put the quinoa in boiling salted water and simmer for 15 minutes on a low heat.
Then drain if necessary and set aside.
Meanwhile, clean the vegetables and cut them into small pieces. Cut the peppers and zucchini into 1 cm pieces and the spring onions in rings.
Heat the olive oil in a non-stick pan and sauté the vegetables and garlic over a medium heat for about 5 minutes. Stirring occasionally. The vegetables should still have bite.
Then add the quinoa, the orange juice and zest, a little lemon juice, the spices and a pinch of sugar. Mix everything well and season to taste again. Fold in the chopped parsley.
The pan-fried vegetables taste very good as a side dish, or as a main meal with a quark dip and a piece of baguette. It is also very good to eat cold.
