Ingredients

  • 180 g quinoa
  • 0.5 ½ bunch spring onion (s)
  • 1 red pepper (s)
  • 2 zucchini
  • 1 clove garlic, finely chopped
  • 1 orange (s), which the juice and zest, organic quality
  • 1 lemon (s), including the juice
  • some olive oil
  • salt and pepper
  • Pinch sugar
  • Coriander powder
  • 2 stalks parsley, roughly chopped

Instructions

  1. Put the quinoa in boiling salted water and simmer for 15 minutes on a low heat.
  2. Then drain if necessary and set aside.
  3. Meanwhile, clean the vegetables and cut them into small pieces. Cut the peppers and zucchini into 1 cm pieces and the spring onions in rings.
  4. Heat the olive oil in a non-stick pan and sauté the vegetables and garlic over a medium heat for about 5 minutes. Stirring occasionally. The vegetables should still have bite.
  5. Then add the quinoa, the orange juice and zest, a little lemon juice, the spices and a pinch of sugar. Mix everything well and season to taste again. Fold in the chopped parsley.
  6. The pan-fried vegetables taste very good as a side dish, or as a main meal with a quark dip and a piece of baguette. It is also very good to eat cold.
